Chocolate & Candy Display #1 –
Strawberry Jellies: Made with strawberry puree and pectin, and molded in starch molds.
Molded Truffles: The outer shells are molded in different shapes and decorated with different colored luster powder, then each are filled with piped ganache with different flavored liquors.
Citrus Pinwheels:
A candy made with fondant and concentrated juice, molded in starch molds and partially dipped in chocolate..
Poodle Truffles:
Hand rolled piping ganache with coffee flavor, hand coated with 2 coats of chocolates, and coated in chocolate curls.
Sleeping Beauties a.k.a. Homemade Milky Ways – The first layer is a soft caramel, and the second layer is a soft chocolate nougat. The outer shell is tempered with dark chocolate.
Sugar Sculpture – The sculpture has different colored pulled sugar. The hearts are made just by blowing up the pulled sugar and using a string to add a dent on top to make a heart. The ribbons have two different colors pulled into strips and formed into bows and twisted ribbons.
Hard Candy – Pulled strawberry flavor sugar cut into little pieces.
Chocolate & Candy Display #2 – Passion Vanillas: Bottom layer is a vanilla milk chocolate ganache, and the top layer is a passionfruit ganache. The top of the chocolate coating are prints from transfer sheets. Pumpkin Caramel Truffles: Pumpkin caramel ganache in pre-made molds coated in milk chocolate. Used a fork to add texture to the outer coating. Pistachio Homage: The first layer is a pistachio gianduja and the top layer is a pistachio marzipan. Only sides and bottom were coated with dark chocolate. The candy was garnished with one pistachio half per piece. Leaf Croquant a.k.a. Homemade Butter Fingers: Inside the chocolate coating are layers of freshly made almond paste and homemade caramel.
